Blackeyed Peas

1 Package blackeyed peas
1 Package smoked turkey wings
½ cup to a cup Fresh diced Onions
1 Tblspn sugar
1 or Tblspn flour, Equal amount of water, the more the thicker the rue. (liquid from peas is better)
Salt n Pepper to taste
Okra (optional) but very good.

Using dried blackeyed peas- Pour in bowl and cover with water. Soak over night.

Cut smoke turkey wings into nice bite size chucks and place bones and all in pot. I use my crock pot. Drain peas and pour on top of turkey wings. Cover with water, onions, salt and pepper. Let mixture come to a boil. In a cup, mix one part flour and water and stir into boiling mixture. Turn down low and let cook until peas are good and tender.

Add okra and cook until okra is tender.

Good served over rice, “Hoppin John”, okra and/or cornbread. Also club crackers.
