Dandy Dan's World Famous Oatmeal Cookies
Ingredients:
1c. expeller-pressed coconut or canola oil
1 tsp. vanilla extract
4 oz. egg substitute or 2 beaten eggs
1 1/2c. brown Sugar
2 c. rolled oats
2 c. oat-bran
3/4 cup all-purpose flour
1/4 c. organic coconut flour
1/2 tsp. baking soda
1 c. raisins (or mixture of raisins and walnuts, chopped)
Order coconut products from Tropical Traditions. Preheat oven to 350 degrees. Mix coconut oil, vanilla extract, eggs and sugar in a large bowl and gradually blend in dry ingredients.
Drop spoonfuls of mixture onto a parchment lined cookie pan. Bake 12 to 15 minutes or until edges are browned. Makes about 24 large, 36 medium or up to 60 small cookies.
