Pomelo or Grapefruit Marmalade

Grapefruit rind and pith. (leave off rind for less bitterness)

Today, I will use Pomelo Fruit from Florida. Pomelo (Grandfather of the Grapefruit) is the largest citrus fruit, with some bigger than a soccer ball. It is native to South-east Asia and is now widely cultivated in America.

Chop to consistency to spread over bread. For this recipe, I used the rind and pith of one Pomelo fruit. Barely cover with water and bring to a good boil. Add 4 cups sugar, one pack of pectin and a tablespoon of ginger boiling for approximately 15 minutes. Cover and let set for 12 to 24 hours.

Bring to a second boil and simmer for 30 minutes. Sterilize jars and pour up.
