Tea Cakes

the national cookie of African-Americans

Unfortunately, these little bites of pure heaven are disappearing fast. Why? Because of the onslaught of fast food and convenience foods.

1 stick butter
1½ c. Sugar
2 eggs
1½ t. Vanilla flavor
2 c. Flour (self-rising or plain)
2 t. Baking Powder (when using plain flour)
¼ t. Baking Soda (only with baking powder)
¼ t. cinnamon (optional)
1 c. chopped nuts (optional)

Cream shortening and sugar. Add eggs, one at a time, and add remaining ingredients. Knead dough on floured surface. Pinch off in small amount, roll up like a biscuit, place on cookie sheet. Press each tea cake down. Bake at 375 degrees for 10 to 12 minutes.
