Yeast Rolls

Recipe from Olivia's Kitchen

1 pkg yeast
1/4 cup water
1/3 cup sugar
1/4 teaspoon salt
3/4 cup scalded milk
2 eggs (beaten)
4 cups flour
1/4 cup butter

Soften yeast in water. Add 1/2 teaspoon sugar.

Add remaining sugar and salt to hot milk. Stir and cool. Add eggs, half of flour and beat until smooth. Stir in butter and remaining flour.

Add yeast mixture. Thoroughly stir.

Knead on lightly floured surface for 10 minutes.

Place kneaded dough in greased bowl, cover with wax paper, refrigerate 4-6 hours or overnight or proceed.

2 hours prior to baking, divide dough in half. Roll into 2 inch rounds. Cut rounds in 1 inch section, dip in butter, fold in half and place closely on a buttered cookie sheet.

Brush tops with butter, recover with wax paper and let rise in warm place until dough doubles in size, approximately 1 hour.

Bake at 375 degrees F (190 degrees C) for 12 to 15 minutes.
