Salmon Croquettes

Recipe from Olivia's Kitchen

1 cn. Pink Salmon
1/4 c Flour (self-rising)
1/2 medium diced onion
1/4 c chopped parsley
1 teaspoon dill weed
2 eggs
1 t lemon juice
4 tbsp oil

Drain and flake salmon, reserving 1/3 cup liquid. Mix salmon, flour, onions, parsley and dill. Mix in eggs, lemon juice and liquid. Heat oil in an iron skillet. Using a tbsp to shape patties, place them in skillet. (do not pat down until brown and flipped. Saute croquettes over medium heat until golden brown.

makes approx. 9 croquettes.

Good with cheese grits, home fried potatoes or as a sandwich.
